  arroz con pollo


  • prepare rice a roni according to package directions. add chicken pieces, cover and simmer for the 20 minutes.
  • spoon rice onto an oven safe plate, cover with grated cheddar cheese and bake at 350 for 10 minutes until cheese is bubbly. (or nuke it...what the heck)

    options:

  • substitute salsa for the diced tomatoes for spicier flavor
  • add sauteed onions and/or green pepper before sprinkling on the cheese
  • 1 pkg mexican rice a roni
  • 1# chicken breast cut in 1" pieces
  • 1 can diced tomatoes
